扁豆鹰嘴豆沙拉

成分
- 一汤匙橄榄油
- 2个黄洋葱,去皮切片

- 6-8片甜菜叶,切丝(去茎)
- 6杯水
- 3/4杯干的小绿扁豆
- 2茶匙盐
- 1罐(15.5盎司)不加盐的鹰嘴豆,洗净并沥干水分
- 1汤匙石榴糖蜜(全食超市有售)
- 一汤匙新鲜柠檬汁
- 两汤匙橄榄油
- 1/8茶匙盐
- 1/8茶匙胡椒
准备
用大火加热不粘锅;锅中加入1汤匙橄榄油。在锅中加入洋葱;煎至变软,大约8分钟。调至中火;加入大蒜。煮大约20分钟,直到洋葱变成焦糖。加入甜菜叶;煮到变干变软,大约5分钟。在锅里放6杯水; bring to a boil. Add lentils to pan. Reduce heat, and simmer; cook until tender, about 15 minutes. Add 2 teaspoons salt; let sit 5 minutes to absorb. Drain lentils; cool on a baking sheet. Combine chickpeas, lentils, chard-and-onion mixture, pomegranate molasses, lemon juice, 2 tablespoons olive oil, and 1/8 teaspoon each of salt and pepper.
